Savory Baked Eggs Ingredients

1 cup fresh mushrooms, sliced, OR 1 4-ounce can sliced mushrooms, drained

12 eggs

2 cups cottage cheese

2 cups sharp cheddar cheese, grated

1 cup cooked ham, diced (or cooked bacon or sausage)

1/2 cup green onions, chopped

1 4-ounce can black olives, drained and sliced

1/2 cup green pepper, chopped, optional

If fresh mushrooms are used, saute them first.

Beat eggs with a wire whisk until light and fluffy.

Whisk in cottage cheese.

Whisk in other ingredients.

Pour into a greased 9 x 13 inch baking dish.

Bake in a preheated oven at 350 degrees for about 45 minutes or until a knife inserted in the center comes out clean.

Note: This recipe easily can be cut in half, or made with only the first five ingredients. If half is made, bake in a 9 inch pie pan for 35 minutes, or in ramekins for 20 minutes.
